Cake-Mix Banana Bread

Today we had ourselves some last minute guests and an impromtu family dinner to attend later in the evening. Thank goodness for my easy go-to recipes and in todays case, cake-mix!

Ingredients:

- 1 Box of Cake-Mix: I used Golden No-Name brand cake-mix from Superstore

- 3 - 4 Ripe Bananas: Or however many bananas 1.5 C yields

- 3 Eggs

- 230 ml Water

- 1/3 Coconut Oil: Or any other oil

Directions:

- 1 Heat oven to 350°F. Generously spray loaf pans with cooking spray (alternative: I used coconut oil)

- In large bowl, beat all ingredients above until well mixed.

- Bake 45 to 55 minutes or until toothpick inserted in center of loaves comes out clean and inside of cracks do not look wet. Cool 15 minutes. Cool completely, about 2 hours, to prevent crumbling when slicing. For easier slicing, store loaves tightly covered 24 hours. Cut with serrated knife, using a light sawing motion.

This was delicious and loved by my family! Pair it with some delicious coffee or tea and you've got yourself a great evening delight.
