Garlic & Paprika Chicken
My Mother-in-law gave me some frozen chicken legs so for dinner, I cooked Garlic & Paprika Chicken! It turned out pretty well but I will be making some minor changes to the recipe to add more flavour. Please note that I did not include parsley and oregano to my dish, but you can!
Ingredients:
- 6 Chicken Drumsticks: I used legs
- 1/4 Cup of Olive Oil
- 4 Cloves of Garlic (minced)
- 1 TBS Smoked Paprika
- Pinch of Red Pepper Flakes
- 2 TBS Fresh Parsley, chopped
- 1 TBS Fresh Oregano, chopped
- Salt and Pepper to taste
Directions:
Preheat the oven to 425 degrees. Clean and dry the chicken and season with lots of salt and pepper. Set aside. In a small skillet heat the olive oil, add the garlic, smoked paprika, red pepper flakes and the herbs. Cook for about 1 minute over medium heat, make sure not to burn the garlic. Pour the olive oil mixture over the chicken and make sure it is coated thoroughly with the mixture. Place the chicken in a baking dish and bake for about 45 minutes or until chicken is cooked through. Serve with your favourite side dish (I cooked yellow rice) and enjoy!
The changes I'll be making to this recipe is to marinate my chicken the night before and to add more salt and pepper to taste. This batch was great but it could have been better! Definitely one of my new favourite recipes and my family enjoyed it very much.
