Sweet Potato Pancakes

If you haven't noticed already, I love recipes that call for very little ingredients. These sweet potato pancakes only ask for two, yes that's right TWO ingredients and it's the perfect meal for Baby Led Weaning!

Both of my kids (ages 3 and 9 months) love this recipe! My youngest is currently BLW and this is super easy for her to pick up and put into her mouth. I suggest making your pancakes small enough for your child to hold in their hands.

Ingredients:

- 1/2 cup of sweet potato

- 2 eggs

- coconut oil for cooking (or whatever cooking oil you want)

- 3/4 tsp ground cinnamon: optional!

Directions:

In a blender mix the sweet potato, eggs and cinnamon until well-combined. Heat oil in skillet over medium-low heat and drop the sweet potato mixture as you would pancakes into the skillet. Cook each side for 3-5 minutes until light golden brown and if you must, put onto a paper towel to drain excess oil. Serve with desired toppings such as nut butter or maple syrup! Enjoy!
