Vegan Tofu Scramble Kale Fried Rice
Seriously a family favourite recipe over here! I love everything about this dish, especially the fact that my kids absolutely love it. Without further ado, here's the recipe! Enjoy.
Ingredients:
1 package of extra-firm tofu
1 bunch of kale (ribs removed, thinly sliced)
3 cups of day-old cooked rice (I used brown, we love the taste over here!)
1 - 2 garlic cloves (minced)
1 inch of ginger (sliced thin)
1/4 cups of basil (fresh chopped leaves)
2 tbsp coconut oil
1 tbsp sesame oil
1 tsp white pepper
3 tbsp soy sauce or tamari
1 tsp turmeric
1 tbsp lemon juice
Salt and black pepper to taste
Directions:
1) Press tofu on paper towel until drained. Slice your tofu into small pieces. Add turmeric, salt, lemon juice and set aside.
2) Heat one tbsp of coconut oil in non-stick pan and add tofu. Stir fry until edges of tofu are brown. Remove into a bowl and set aside.
3) Add remaining oil and bring to high heat. Add chopped garlic, ginger and kale, then saute until kale has just wilted.
4) Add rice, soy sauce, and white pepper and stir fry until mixed and coated well.
5) Add tofu and fresh basil and mix well with all ingredients.
6) Serve hot!
