Joanna was a genius for putting this recipe into her cookbook! It was easy, delicious and come on, look how beautiful it is! I think this is going to be my new go-to recipe for when I have special events.

This recipe was easy enough with the exception of the glaze (which is essentially sugar and lemon juice by the way). There is a particular consistency it needs to be to look very similar to the photo in the cookbook and I got it wrong, twice. I do believe you need to have the glaze sit longer for it to be thicker but I was too impatient. I wanted to dig in as soon as possible and honestly, it still tastes good regardless of the thickness. This cake tastes real good microwaved for a few seconds, with a cup of tea, on the patio. It's super refreshing and moist and my kids, husband, and neighbours loved it.
