Grinch Cookies in June

Every Christmas I make my moms famous Grinch Cookies for my family and friends. I love wrapping them up and gifting them to people I love because if you haven't noticed already, my love language is baking. When I was younger, these amazing Mint Chocolate Chip cookies really kicked off our holidays and every year, like clockwork, I'd ask my mom when she'd be baking us a batch of these. When I became a mother, I asked for the recipe and I've been baking these since. My husband, Chase and Hana LOVE these cookies and I love how excited they get when they see the first batch of the season come out of the oven, so soft and oooey-gooey. Also, I nicknamed these Grinch Cookies, because you know, they're green and Christmas. Right?










For the first time ever, I thought I'd share this special recipe with all of you. Also, for the first time ever I decided to bake a quick batch of these cookies in June. I hope you guys enjoy my moms Chocolate Mint Chip Cookies!













Ingredients:


2.5 cups all-purpose flour

1.5 teaspoon baking soda

1/2 teaspoon sea salt*

8 tablespoons unsalted butter (room temperature)

2 cups granulated sugar

2 large eggs

1.5 teaspoon vanilla extract

1.5 cups semisweet chocolate chips (sometimes I add a little more because more chocolate = YUM!)

1.5 teaspoon peppermint extract (sometimes I add a little more)

Green food colouring (add as much or as little you'd like - the more drops, the greener your cookies!)


* I've never been a fan of salt and whenever a recipe calls for it, I never add it. My moms version lists it as an ingredient but I don't typically include it.


Directions:


1. Preheat the oven to 350 degrees, line your baking sheets with parchment paper

2. Whisk flour, baking soda and salt in a bowl and set aside

3. Add butter and sugar in a bowl and use either a stand mixer or an electric hand mixer to beat on med-high speed until mixed. Add eggs and beat until blended and then add your vanilla, peppermint extract and green food colouring. Keep mixing until the green is fully mixed in.

4. Turn mixer off and add your flour mixture and mix until everything is pulled together (it'll be chunky!). Add your chocolate chips and beat until fully mixed into dough.

5. Drop spoonfuls onto your baking sheet, bake until lightly browned (about 10 minutes) and cool on a rack for a few minutes. Then, enjoy!



These are so refreshing and absolutely delicious! My daughter is asking me for some as I type. I am super proud of these guys and hope you love it as much as my family has for the past 25 years.
